Earlier in the week, we posted a photo of the sign at the not-yet-opened Bill the Butcher shop on Stone Way which implied that it would not be opening. It was a bit tough to tell from the photo, but the “never” sticker that changed “Coming Soon” to “Coming Never” was on the outside of the window by an unnamed party, and was not, unsurprisingly, an officially sanctioned Bill the Butcher statement.

Terri from Bill the Butcher wrote us to let us know they got “punked”, but don’t mind the “ribbing”:

Thanks for alerting us to what was vandalism on our sign. And while the ‘Coming Soon’ time frame is taking a little longer than we hoped, we are still “Coming Soon” and looking forward to opening in the Wallingford neighborhood. For a not quite 3 year old start-up company, we have always had a vision for our growth that was based on bringing the neighborhood butcher shop into the great neighborhoods of the Greater Seattle Area. Our sign is still in the window because we are still committed to opening in that location. As a publicly traded company, and the only publicly traded butcher company, raising capital is a challenge and factor in the nitty-gritty time frame for our planned new shops. So we ask for a bit of patience and we will strive to make the wait worthwhile when we do open.

As a fellow small business owner, we can empathize with the pain of maintaining cash flow and growing during this recession, as aspiring locavore we applaud their commitment to providing locally produced foods to local consumers and as a foodie, we’re hungry for their meats. So, good luck Terri and crew, open soon!
